Don't Think, Just Eat!

Grilled_pizza_1Nothing goes better with a football game, than pizza. Check that, nothing goes better with a game than Grilled Pizza. No matter which way you slice it, it's simple yet complex at the same time. Plus no matter what you put on it, you can never go wrong. Whether savory, spicy or sweet pizza is always a big hit on game day.

There is no wrong way to make pizza. When it come to grilled pizza, the less it looks like circle the the better it taste. Plus I Think it is a great way to let your guest, get hands on with their dinner. Now a days you don't have to bother with making your own pizza dough. We all have that favorite pizza place in our neighborhood. Just go and asked them to sale you some raw dough. They will be happy to do that. Tell them how many pizzas you want to make, they will give you the right amount. If you like you could buy some of their sauce too.

bbqWhen it comes to Grilling, In my opinion it's either, really good or really bad. Here are the categories that lead to bad grilling. The "Pokers". the "Squishiers" and the "Flippers".

The "pokers" are those who love to poke the meat with the meat fork, letting all the juice out of the meat.

The "Squishier" are those that with a spatula like to press down on the meat. They think it will help the meat cook faster. It does, while also letting all the essential juices drain out.

The "Flippers" are those that love to flip everything on the grill constantly not allowing the meat to develop a nice crust or grill marks that are important to enjoying the smokey taste. Not to mention adding to the cooking time.

Meat on the grill should only be turned once. The only tools to use, should be a pair tongues and a spatula for burgers/fish.

If you are in any of this 3 categories "step away from the grill, slowly and drop your weapon".

Those are big No!...No! when it comes to grilling.

Game Day/Recipes

Since 1934 Turkey & Football have been a perfect pairing. This thursday, we give thanks for what we are fortunate to have. Best way to do that is, by spending the day with loved ones, Football & food till you are green in the face.

Since this Thursday, you will all have your traditional "Thanksgiving" menu, to pair with your football watching. I have one tip, to hold you and your guest over till dinner. Have a pre made Snack (i.e... mix nuts, gourmet chips,& olive's or cheese platter)

New found love for good food, has taken the GAME DAY grub to new levels. Foodies are now putting their stamp on tailgating. Gone are the days of ordinary dogs & burgers. Here are the days of full blown smokers, whole roasted pig's, lobster boils, sushi rolls and all sorts of gourmet techniques & ingredient's. The sports fan has a more sophisticated pallet, what you serve matters.

The goal here is to help you with your game day grub whether at home or tailgating at the stadium. Making sure you have as much fun as your guest, by sharing with you quick simple recipes w/sophisticated flavors. We will also share tips and techniques that will keep your time in the kitchen or on the grill, as short as a 30 sec. time out.... Ok maybe not that short, but you get the point.

The key to a successful High Boltage Sunday, is to create a game plan and stick to it. Make sure that your game day menu does not keep you a slave to your kitchen/grill. Do what the pro chef's do, Prep ahead of time. Split your menu in half. What you can prep & cook the "Night Before" and what you can prep &cook the "Day Of".
